Winter Stuff
We are officially in the meaty bits of winter. The time when one must find ways of distracting oneself from the view of the outside. Here things have melted somewhat, and the bare earth has begun to poke through. The warmth has made things slushy and ugly. So to keep myself sane, I have begun a few projects.
#1 A Whole Lotta Cards n Stuff on Shutterfly
With a delicious $20 off coupon, I have made a bunch of cards for the upcoming year's holidays. Mostly bday cards because, heck, I'd be spending the cash on those cards anyways, why not make 'em nicer and cheaper. I also got a nifty $10 off coupon after my order.
#2 Making a Scrap Quilt
With the help of my creative husband, I started a quilt with my pinks stash. It uses a hts, or half triangle square; the design is made up because of the odd amounts of fabric I am trying to use up. This is my second quilt.
#3 Trying to solve our furniture situation
We have a couch currently that I got for free from a garage sale a few years ago, and I have been offered a really good deal on a nice couch and love seat by some people I work for cleaning their house. Question is what to do with the old couch. Honestly, it needs to be reupholstered, but the couch guts/frame are in good condition. Hmmmrrrrrmmmm....

Betsy's Eggnog
Here is a version of eggnog that easy to whip up fast for those nog cravings. (SCD)
Betsy's Eggnog
4 free-range organic eggs
1 pint organic cream
2 C almond milk (or any other nut milk)
1 1/2 tsp ground nutmeg
1/4 C vegetable glycerine
Whisk ingredients together and drink up within a few days. (Make sure to only use top quality eggs, as this will be uncooked.)

Betsy's Coconut Curry Chicken Soup
Today I revisit the bloggosphere. Here is a look at one of my latest recipes.
1 pack of mushrooms, (I used baby bellas)
1 TB butter
3 chix breast, cubed
6-8 C chix broth
1 can coconut milk
5 cloves of garlic, minced
1/2 tsp ground ginger
2-3 TB Thai red curry paste
2 med carrots, sliced
6-8 green onions, chopped
salt to taste
Saute the mushrooms in the butter until they are done to your liking. Next cook the chicken until no longer pink and juices runs clear. Into a stock pot, combine all the ingredients and simmer over medium heat for 10-15 minutes.
This soup comes together fast, and it is a wonderfully warming soup, perfect for a blustery day.

Life and Other Oddities
I guess things have turned a little bit differently than I expected. I have decided to go back to college to finish my degree. Yeah, I know, where the hell did that come from? I am not even entirely sure myself. I just want to do it. I really would like to finish out my art degree at say UW-Green Bay seeing as thy have a fiber arts program. Maybe I could still have my business and go there twice a week or something, slowly chipping away at it?
On another note, I am now single again. I just couldn't do it any more; the long distance thing was draining me beyond what I could manage. I still am in love with the man, so what do you do with that?
In the past, I probably would be joining a dating site by now, only days after our dissolve, but I feel so utterly exhausted there is that looming feeling I will not date again. Even though that is probably hogwash, I still feel as though I've got a love hangover and have been run over by a hummer.
I know I can't eat myself into oblivion, but that's really tempting. I guess part of the hard part is I should have stood my ground early in the relationship about not moving and when I found out he wasn't so hot on the idea of marriage, gotten outta dodge.
There are, of course, many redeemable qualities about the man I was with to make me still want to be with him. That is also the pickle here, I want to be with him. With him in the same town, the same house, the same marriage, sharing a life. There were other priorities on his list, which kept me waiting. Waiting for him to realize how great I am, how loving, how giving, how fun, how sexy, how I'd make a great wife, so that he would move by me asap and snatch me up before any one else could!
